Radish Salad



Ahhh the radish. Underutilized in most kitchens (mine included) however, the radish does have its allure. Radishes are high in vitamin C and K, as well as a high mineral content. Also, like the watermelon, the radish houses heaps of water and fiber. More on radishes health here.

Water crest is new to me, its a bitter green/herb, genetically linked to cabbage. It’s high in vitamin A and fiber. Great for digestion also vitamin A is spectacular for skin tone among a multitude of other benefits.

Kale: it’s a super green. Greens are essential for your diet, kale is the green for your digestive system and your cholesterol levels. It is a regulator aimed at detoxifying your system. Eat often.

This salad has a bite to it. I will say it is big in flavor yet can be on the bitter side. If you are someone who likes salads sweet try adding cantaloupe, strawberries, any sweet fruit you think may enhance the salad. Personally, I like bitter tastes some times, especially great with a fish course. This is a perfect salad to nab all your ingredients at the local farmers market. ‘Tis the season!

Ingredients (1 serving)


  • Basil
  • Pine nuts
  • Parm Cheese
  • Lemon
  • Olive oil
  • Sea Salt


  • Kale
  • Water Crest
  • Radish
  • Pesto, olive oil
  • Cheese
  • Bread crumbs

Cut up radishes


Cut greens


Toss in bowl with pesto and extra olive oil (1-2 tablespoons)

Top with cheese
