Mac and Cheese with Sage Sausage

Sure, there are a million mac and cheese recipes out there, all fantastic as mac and cheese is a classic. However, it’s the blend of gruyere and cheddar cheese with the addition of sage sausage that make this recipe unlike the rest. Sage anyone? This potent herb happens to be a memory enhancer! As well as the only heathy part of this recipe. The saying “wise sage” is so for a reason.  Incorporate more sage into your diet (great in soups, meats, with greens) assist your brain, among many other benefits.

This is how I justify my love for mac and cheese, I add sage- so now it’s brain food. Truth: mac and cheese is not healthy (Shocker, I know). Yet, it’s mac and cheese! So creamy and comforting. I welcome any excuse to cease this indulgence. In moderation- of course.

Mac and Cheese with Sage Sausage

by Burnt Toast Kitchen

Prep Time: 15 min

Cook Time: 12-15 min

Ingredients (4 Servings)

  • 1/2 lb Macaroni pasta
  • 3 Tbsp chopped sage
  • 1 Large pork sausage
  • 4 Tbsp butter (1/4 cup.)
  • 2 1/4 Tbsp flour
  • 1/2 Cup milk/half and half
  • 1/3 Cup grated gruyere cheese
  • 1/3 Cup grated cheddar cheese
  • Topped with breadcrumbs

Instructions

Pasta

Bring a pot with about 5 cups water (or more) to a boil

Add 1 Tbsp salt to water to flavor pasta and boil water faster

Once water is boiled add pasta

Turn down heat slightly

Cover pot, cook till texture is to your liking. Around 5-10 min, depending on freshness

Cheese and Sage Sausage Sauce

In a pan add: sausage, sage, butter

Cook till sausage is browned

Add in flour to make a roux

Slowly pour in milk, stir/whisk

Once somewhat thick add in cheese.

Whisk till all melted.

Baked Mac and Cheese

Strain pasta and fold into cheese sauce

Pour Mac and cheese into baking dish

Cover top with breadcrumbs and extra cheese

Bake on 375 for 10 min

Finish with 2 min on broil.

    a little unhealthy ain´t bad from time to time, plus this is much better than super-processed foods. this is fresh, fattening and delicious– gotta love it!
